We chase deliciousness by selecting the best ingredients, making mostly in-house or with selected producers we trust.
Technique also plays quite a role in our kitchen. We love to ferment, pickle, smoke, macerate, marinate, and test the limits of fresh produce against fire.

Why we do it
It started with a simple idea: delicious food for everyone, just without the animal part. We grew up around meat, so giving up flavor was never an option, and eating out plant-based often felt predictable.
After a year of experiments, tastings and late-night talks, SOIL opened: a relaxed place for lunch, dinner or a drink where everything is made to taste amazing. It just happens to be plant-based.
